I was trying to do that last year. I could for a while with Steamlabs App in iOS. But doesn't support any IAA apps i guess.
Still was sounding good with a little latency, but overall was OK.
I was looking to screen share (only video) to PC/Laptop and audio indepent to do some streamings.
I would say the best way would be just setup an overhead camera and stream with a PC or Mac.
If you have multiple displays, zoom has a feature where you can share your ios device screen. You could stream that display through obs I believe. I haven't tried it but I don't see why it wouldn't work.
Have a look NDI HX Capture. It
s 10 Euros or so but it
s worth it.NDI is a protocol for professional network-video. (I am not a streamer/youtuber myself but use it for live-events quite often.)
vMix supports NDI out of the box, for OBS you need to install the obs-ndi-plugin (at least on Windooze).

I'm intrigued about your setup to do Steaming properly with good audio.
I was thinking in Smartphone as Webcam + Sonobus to Ableton Live and stream audio directly to PC, a bit of delay input but still getting the Master Audio to PC.
I was gonna say that. I work (actual work not Music work) on Zoom and Google Meet sometimes and both have the ability to share screen, I’m not sure what the next steps would be but that’s half the battle…. Zoom has 40min time limit on free plan, Google meet has an hour limit on free plan.
Very simple to do // no extra cords or devices or programs needed
Here’s a quick test that went straight to twitch // audio & video running smooth / everything but my outdated 2018 iPad Pro 😂

Thanks, just found out you just have to HOLD the screen record button it will pop up which platform you want to stream to.
So, u just installed Twitch app or Streamlabs and doing it directly? At the same time..... i don't how if that works well with IAA apps. I remember that i had problems with IAA + Streamlabs, maybe AUv3 only is the option

Should be today. Just woke up and hitting the coffee. I did receive a message back from Twitch support. It looks like they’re not set up yet for streaming from an iPad.
Someone in my last stream said I might be the first to stream iPadOS noise to Twitch. Not sure how accurate that is but I’m going to go ahead and label myself a pioneer 😂

Still, i think Streamlabs works quite OK. And you can stream to Twitch/Youtube/Facebook if u want (not Multi Stream)
I got an error setting it up // any advice?
Configure everything in the Steamlabs app (account, etc....) and then start broadcast as you know (Holding Screen Recorder button and select Streamlabs and then Stream)
Let me check if i can find a good video to show you
