yeah, it's a neat little controller. Certainly it has limitations but very configurable for a lot of use cases.

In SWAM instruments, the velocity on a keyboard only really affects the attack of the note. So for flutes, it will be how hard the flute is blown (virtually). Sort of like the "A" part of ADSR on a synth. Expression affects the volume and overtones of the rest of the note (like the "DSR" on a synth). So harder velocity on the keyboard will not affect the volume nearly as much as whatever is controlling the "expression" parameter. It also depends on how velocity is mapped in the advanced midi settings. Velocity can be mapped to follow expression, so everything would be based on that, or it can be separate (like keyboard velocity affects attack of the note, and mod wheel affects expression for instance). Does that make sense? It very much depends on what controller you are using, and how you want to use that controller to affect the sound.
