Living in MIDIHELL!!
Here' s my setup. I am heading out of town in a few hours and I have been going through hell for two weeks trying to get my iPad rig up and running. (Flying and can't take my keyboard)
I have a problem with apps not not being fully controllable by iMIDIPatchbay and/or Midiflow.
I need to send program changes to Galileo Organ and Magellan Jr
I need to get Sound Canvas to stop switching to Omni mode as opposed to Network (In Core Midi)
The main issue is having apps playing when the should be shut off. For instance, I turn off it's channel in IMP External 1 and Sound Canvas will still be playing. And getting program change info to be sent and received. Also is there a app that shows you that your app is receiving midi info and on what channel. (I know Midiflow does. But does anything have a Sound Canvas like display that simply shows that midi info is being sent to a given channel. As opposed to Midiflow showing you the actual data being sent)
Here are some notes I made for myself while trying to get the beasts to work and play well with others.
Launch apps from Midi Flow (iGrand Piano and Magellan must be launched independently)
Sound Canvas: Ch 1, 2, SC 8820 Map, Won't Launch From Midi Flow, Does not respond to Midi Flow(?) seems ok by itself, must always reset CoreMidi to Network
Music Studio: Ch 3
iGrand Piano: Ch 4
Magellan Jr: Ch 5 Launch indep, Menu, Pref, Midi, BG Audio/ Mute works
iLectric Piano: Ch 6
Garage Band: Ch 7
Sample Tank: Ch 8
TF7: Ch 9 responds to midi flow
Galileo Ch 16 (Doesn't respond to program change info, is there are Preset list with the Program, MSB/LSB numbers
I am playing aux keys so I really just need: Magellan, Galileo and Sound Canvas for now. KILLING ME, SMALLS! HELP!!!!

I don't own SC but it sounds like that's the problem. Is it one of those apps that listens to everything all the time? If you can set it so that it only listens to iMP or MIDI Flow it should be controllable. MiMix could help you mask the fact that it's triggering notes but isn't going to solve your program change situation.
Think if SC is indeed "promiscuous" with regards to MIDI ports you're just going to have to use another app for those sorts of sounds. Though @dwarman often has a solution for these sorts of things.
That would be a cool view for MIDIFlow—just a bunch of vertical MIDI meters. Source on top, destination on the bottom. I'm fairly certain it would only be able to show you things that are routed to/thru it though—I don't think a system wide MIDI monitor is possible (unless Apple built it).
Every midi instrument/device "should" have a midi implementation chart.. ie what they respond to and what they don't respond to.. Pages 6 & 7, in the following link shows you a blank midi implementation chart with all the control numbers in the right place.. It's just a case of trying each one out, if you can't find the chart for the instrument you want to control...if that helps.

Wow! What iPad are you using to run all that?? MidiVision will let you see what's going on with the midi....not an easy view entirely, but you can filter it. I imagine I'm too late to help, but I'd be interested to understand how your controller(s) tie into it and what you're trying to do. If you have multiple controllers, for instance. There's a light-weight app called mid breakout box that might work, depending on what you're doing. I've had a good deal of luck using that with SC.

funjunkie27, iPad Air is running it all fine thru irig 2. I'm basically trying to set up a set list of patches with the above apps for a gospel gig. I've got bells on one song, sine wave on another, organ on another. I'm trying to get iMIDIPatchbay to be the master controller because then I have real time volume control over each app. Checking

syrupcore, SC seems monogamous with omni mode no matter how much Network tries to force the issue. Generally whenever I leave that page and come back it is set on omni again...

It's murder for sure. Up till 6 this morn. Last question er'body. Anyone ever try to do what I'm trying to using Cubasis as the midi hub/mixer/program
changer. Mimix works for mix but not program changes
I use Cubasis as a midi hub/blank canvas that I splash with shades of audio from various apps. I don't use program changes because it can cause problems/more work when mixing..but they can be very useful for a live set.
