Not sure about the app, but it looks like a first gen iPad. Also, an Akai LPK-25, Korg MicroKEY37 and an NS Design violin. I found another pic where you can see she has a MacBook on the ground.

I saw her "One World, One Operating System" tour back in the '90s. Still wear the T-Shirt.
That violin is actually her own invention, called the tape-bow violin. Per wikipedia:
"In 1977, she created a tape-bow violin that uses recorded magnetic tape on the bow instead of horsehair and a magnetic tape head in the bridge."
One of the cooler instrument inventions.
My first was the Mr. Heartbreak tour, from 1984. Still wear the t-shirt (only on special occasions, though, because it it really is too small).
