Let's get physical......modelling!
Any good recommendations for expressive synths which model wind and string instruments? Would also accept decent sample based instruments as well - looking to add some nice "world" sounds to my palette and the touch screen is such a great input method as you can really nail those in-between notes, quarter tone and what-not.

I don't suppose this is what you're looking for/mean but the Synthmaster Player 'Sounds of the World' pack has some nice stuff. Very partial to the 'Santoor' etc....
Oh I'm by no means limiting myself to strings and wind! Anything physical, I'm interested in! Especially for sound design.

Just to note that SpringSound can be CPU intensive @chimp_spanner. Great app though.
Though Laplace is the one true physical modelling synth of the set, all three of the newest IceGear synths have resonators...
ZedSynth is another true physical modeling synth. It's cpu hungry also

GeoShred
GeoShred is based on physical modeling and is highly expressive. You can slide to notes (automatic intonation) and create vibrato, but I'm not sure about playing quarter-tones.
Man. I've been playing with Geoshred for hours. I mean really playing. I'm a guitarist, primarily, and this app just feels so natural. The only thing that'd possibly make it better is touch sensitivity (which I don't know if the newer iPads support) but damn. This is fantastic. Also FingerFiddle is equally impressive. Exactly what I was looking for in the string department. Thank you so much guys!
Although I'm all for "nailing those in between notes" I don't think many synths really explore that. Maybe why I love animoog and ondes. Please expand my horizons, as I'm sure I must be missing some (actually there are a few good recommendations in this thread already)
Don't know if it exactly fits the bill but Roli Noise 5D can make some nice realish sounding noise, especially on a 6S.

Laplace! I come back to it often, it's such a unique synth. Anyone looking to branch out from analog type synthesis sounds will find a lot of new sounds. It's strength, for me, seems to be making ethnic instrument sounds, vaguely guitar like sounds, strings, strange flutes, steel drum metallic percussion. Something about the lots of complex overtones and harmonics translate to obscure handmade instruments.
Mersenne is neat too, but is more oriented toward bells and steel drums, tuned percussion.
Wavemapper isn't actual physical modeling, but i think can make lots of interesting sounds like you might be after. Sort of sample based, but you can combine all these separate aspects of different real instruments into new sounds, like distorted guitar with the envelope of a piano, or something.
Another vote for SpringSound. A personal favorite in which I can happily get lost for ages.
