This thread makes me smile: My favorites are generally not subtractive, and there are amazing ones in iOS...
So (without duplicating) I think everything listed above is tops...

I often use the default Chiang Mai preset to begin anything in gadget. It just sounds so damn good.

Modular doesn't refer to a specific kind of synthesis, but to the general architecture of the device
(you may have modules of any kind of soundgeneration and manipulation interconnected)
Additive means to have a base frequency and the sound generator adds overtones to build a spectrum
FM (frequency modulation) needs 2 or more oscillators that interact according to a specific process
(it's fairly complex and used in 2 forms: based on frequency or based on phase angle of the waves)
Subtractive means the sound of at least one oscillator is formed by a filter
usually the source is a simple waveform like saw, pulse, sine, but it could as well be a sample or subsections of samples (arranged in a so-called wavetable)
the Waldorf (Micro)Wave had wavetable oscillators followed by a filter section (subtractive), but that's called Wavetable Synthesis usually - the respetive synths under IOS are Nave and WaveGenerator
a more recent form is called Granular Synthesis, which dynamically uses variable sections of samples
again this may be followed by a subtractive (filter) section or be part of an FM oscillator...
it can even be used to emulate a modular subtractive analogue synth to a stunning degree
which is the case with Apesoft's iVCS3
bottom line: there are practically no limits under IOS
iirc Mitosynth is an Additive + sample based Synth from it's basic structure
while the iVCS3 is indeed a subtractive synth at first glance, it has very unusual characteristics
it's a remarkable piece of software and it's REALLY demanding - but also rewarding
(download of the original manual of the EMS Sythi highly recommanded)

the M3000 Mellotron by Omenie - not really a synth itself, but a great buddy for any synth

Most synths are subtractive (start with an Oscillator, then subtract frequencies with filters/envelopes/modulation).
My personal favorite iOS non-subtractive synth is, at the moment, Nave. That tends to change almost weekly.
Just reading this thread there's a wide variety of synthesis on the iPad to choose from.
Sylo Synth is a cool uncomplicated granular synthesizer made by Wooji Juice.
