The fact that you have to manage it, suggests there is something not right, otherwise you wouldn't have to think, just do. If you don't have to manage it, you cannot do it wrong
The problem is that the UI space has been reduced, the answer is not to reduce the UI, it is to present the UI in a way that fits within the reduced space, or find a way of expanding that UI Space.
If a dev created a fully featured AUx with fully functional UI (either by tabs, scrolling whatever) within minimal graphics (remember these take up a portion of the valuable ram space allowed for a AUx)
Along with that AUx provide a companion app, that is not IAA Audio, but communicates with the AUx via MIDI, this would allow a 'bigger' UI outside of the AUx limitations and would give us the added benefit of the AUx having MIDI Control for all of the available settings.
The companion app could also act as an AUx host for the AUx for those who want to use it in a stand alone mode without another host.
I guess it could also act as an IAA externally to allow those who want to use IAA to do so.
I think it's best taken case by case. The PPG apps are complex. I personally see the compromise as the best way for apps that I would rarely just tweak all the complex settings while making a tune. So I can still tweak, but the full app is there for time taken to go in depth. Yes another approach may be better for other apps.

With regard to packing synth parameters into a small UI, I would love to see apps shamelessly steal the Thor paradigm from the Knobs page. Their multiple panels which collapse into the most essential parameters is to me the best answer on iOS. This is sort of a "tabs plus", since space is not wasted on tab labels, because the collapsed sections actually provide both functionality and cues as to what the panel does. I love TeraSynth, but the endless scrolling is tedious and I always feel like I need a roadmap to go along with it. Just another opinion...

I really can't see that you need much more for the AU. If you really want to be messing with wavetables, it's best done as a programming session.
