Au Lab + Au Net Send
If you've used OS X you've probably noticed AuNetSend as one of the Native Apple plugins. Au Lab is available via the Apple Developers site (need free account to get). I was playing around with both of these today and discovered it's easy to create as many audio input/output channels as you'd like. The AuNetSend plugin can be loaded into any host as an FX, much more to talk about here... but a screen shot for now:
