Sustain pedal
Is there an app that can simulate using a piano sustain pedal?
I have a pedal but not always with me, so is there something I can set to on/off to do this while playing piano etc?

Garage band has a sustain button that can be pressed and locked too. If that's what you mean.
If your piano or piano app supports midi, you can try seeing if it accepts midi cc 64, which is generally used for sustain. You would then have the option of using an app such as Midi Designer or TB Midi Stuff to create an on screen sustain button, or map any midi capable footswitch, pedal or controller you may have available.
Values of 0-63 are sustain off
Values of 64-127 are sustain on

I'm using a zivix Jamstik and neo soul keys at the moment. I have a piece which needs sustain pedal. I can do that very easily at home with the iconnect and an irig keys pro and foot pedal.
Just wanted something mobile so I can sustain when I do not have my other hardware with me

If I use an expression pedal with my midi controller, I can map the pedal to any knob? Is there many iOS synth that allows you to do this?
Eos reverb has an infinite sustain feature that you can turn on and off with midi, OP of five years ago.
A MIDI expression pedal normally sends a CC (maybe CC 11), and some are configurable to send another message instead. Most iOS synth apps include a MIDI mapping function that let you connect controller inputs to specific synth knobs. AUv3 apps that make their parameters visible to the host (Audiobus or AUM) let you use mapping in the host to do this. So yes, you can do this easily with most iOS synths.
Humm. What do you mean by knob? Do you mean a knob on your controller, or a knob on an app?
You can't exactly map an expression pedal to a controller knob. If your controller supports an expression pedal, then it probably sends out a particular MIDI CC when you move the pedal, and that CC is probably different from any of the knobs on your controller. You can easily check whether the expression pedal works and what CC it sends with a midi monitor like midiSpy, or just try learning it to something in AUM.
Virtual knob I should say.
I have a midi controller that accept expression pedal. My goal (I don't have an expression pedal yet) was to plug my expression pedal in my midi controller and, let's say, double click on a virtual knob in Agonizer (or any synth) and map the cutoff with the expression. Or the volume, or the attack or any parameter. In that case, the expression pedal play the role of a knob on the midi control.

Sorry, I've only ever tried one from M-Audio, so I've no basis for comparison.
It has an M-Audio <-> Other switch on the bottom that can change the polarity. I see the Moog one has that too, so should be fine.
@Montreal_Music I have the Moog EP-3 hooked up to my Blueboard, and love it.
I use that MP-3 and have never experienced any problems.
Yes, a polarity switch is really useful for when you want to connect to another keyboard that might require you to switch it.
You also have the first wireless expression pedal : the BOSS EV-1-WL (approx. 170$)
I have the Moog EP-2. It looks like this is a newer model with the polarity switch and detachable cable. They look pretty much the same other than that. The EP-2 is a decent pedal and it works well. The attenuator control is nice to have. I have a really old Morley volume pedal that I use as an expression pedal by adapting the input/output with a Y-splitter cable that I like more than the EP-2 though. I think kind of as a general thought that an active volume pedal will feel better but the Moog feels fine and is built pretty well and is hard to beat for the price.
(Edit to note that the reason I mentioned "active" for the volume pedal path is that the impedance of a volume pedal is usually going to be higher than that of an expression pedal and that could cause a problem matching with some MIDI controller setups. If the active pedal is only a buffer and doesn't add any gain, it can help with that problem. If it does add gain, then it could break things.)
