If a full manual seems like too much work, I would start with a compact explanation of the few things that are not intuitive. It could just be one or two pages. Projects are here, Titles and Transitions are here, tripple tap to detach audio from video etc.

I reckon it takes a lot of time to make a manual and definitely less to make a tutorial video running through all the features. It will probably make me unpopular but I'd rather you spent your time on the app itself than messing with manual. Here's my first quickie on Luma. I found it a bit fiddly (especially key frames) but also very quick to work with. I sacrificed myself by wandering at night in my back garden.
+1 Agreed, I don't really think this app needs a full manual to be honest. It's fairly intuitive. Maybe a one-page thingie listing what's what.
Other than some basic list of the tools and what they do, I can't see the time invested in writing a full manual to be the best use of your time. I think maybe a couple more short demo videos that go a little beyond the basics you already have in the current demo video, and you'd be covered just fine.
