Some raspberry flavored Ruismaker drums? The original Ruismaker ran on a Raspberry Pi 2, but with the W model it could be made Link enabled I guess...
Very nice. Am tempted to make a SunVo_ machine. Not that I need one but it could be quite fun if it had some realtime controls.

Sunvox can send and receive signals from GPIO, has special modules for that

It just takes a bit of perseverance and is not that difficult once you've watched a few videos. For me, it feels like a cross between plunging in several guitar pedals vs something like the Korg iMS-20.

All good options but none seem particularly suited to the small stock touch screen. If i'm having to plug in a full HD screen then it ruins portability and may as well just use the laptop.
Yes. If you want something portable, you can attach a small touch screen display but you'll have to write your own software (because existing products are not optimized for a small screen) and it's not for everybody, for sure.
So, there's a reason iOS devices are very popular for making music. If you want true portability, nothing can compare with an iPhone/iPod. Though I'm very tempted to buy a chromebook, install Linux on it, and run Sunvox, PureData, SuperCollider, etc., basically do things my iPad can't do (except Sunvox)
Don't forget all those redundant old single core Atom-based netbooks tucked away and stored and forgotten. If you've still got one, it's already paid for.
