Two things:
How can I have multiple instances of the same app ( non fx)
How can I record it all as ONE TRACK to AudioShare without using AudioShare and launching it separately and choosing aum as an IAA?

You can use multiple instances of an app as long as its an AU. Just click on the + for the source and choose AU Extension apps.
As far as recording all as 1 track, you would need to send everything to a mix bus.
just make sure you record the mix bus track.
