What are the most inspiring and expressive instruments on iOS ?
I think the most exciting thing about an iPhone/iPad is the multi touch screen. There's a lot of discussions on here about compositional tools e.g Korg Gadget / Modstep / Cubasis, but what about standalone instruments that really inspire you - things that are a joy to use.
For example the drum machine on Figure, although simple, when I first used it I created stuff that inspired me, things that I would never have imagined my self.
What else is there like this?

I've rarely had as much fun as Orphion+Animoog
The iOS platform is unique for many reasons but @Alex fox you hit upon the biggest differentiator and reason to switch from desk/laptop IMO: the touchscreen interface.
Although some balk at the sea change from knobs & buttons to flat glass (hey, I love me some knobs too), it takes mixing, performance and composition to entirely new level.
The standard bearers of the tech like Animoog, ThumbJam and even manipulation devices like Borderlands and Samplr are unimaginable without the touchscreen.
So those classics are definitely in the race and I'd throw in Yonac's Slide Guitar app too, that thing is incredibly cool.
Guitarism should never be left out!
I think the developer got busy with other things before the app reached its full potential ( particularly on the iPad), but as-is its an incredibly playable guitar sim which would be impossible without a touch screen.
It was Garageband with its interface that adapts to the instrument you are playing that first did it for me on iOS, Keys, strings, drums....
Animoog keyboard of course....and the ribbon in Model 15 is pretty nice too.
Another vote for Geoshred - it's not perfect, but great for showing off the expressive potential of the iPad. I regularly boot it up and noodle - just like I do with my 'real' guitar.

Geo Synth is awesome, in some aspect better than Geo Shred. You can import your own samples in Geo Synth from Sample Wiz.
Bebot is definitely one of the most straight fwd expressive app.

Virsyn synths are not bad either with the mod wheel directly on the y axis of screen keyboard.
Thumbjam and Garageband
TC-11 synth is one of my favorites to play with, although I rarely end up with anything that I keep to use. I LOVE the keyboard in Animoog above all other keyboards. iKaossilator has resulted in more fun and useful output than any other app on my iPad!

I'm sure there was another that came out earlier but I forget the name
iFretless bass! It's my go to noodle machine. Also the WaveGenerator keyboard is pretty great. Very similar to Animoog I guess, but it's often overlooked and deserves props imho. I think of everything I've tried, Samplr is the most touchable.
Anything that allows you to set velocity and glide your fingers for polyphonic aftertouch. Animoog was a revelation when I first tried it. The worst iOS keyboard is Korg Gadget.

But the Seaboard 5D app is the most expressive thing for me.....sadly it's a player only on iOS.
And these are also only really expressive on devices with 3D touch.
It's the combination of two AU synth at the same time what inspires me the most. Both are triggered by the same keyboard or midi input and both can be tweaked simultaneously. AUM is such a beast; I wish it had a simple sequencer.

Samplr.
One of my favorite things to do in Samplr is to spend a lot of time working on a phrase, only to pull the rug out from underneath it all by switching modes. You can get some interesting things this way.

5d is sooooo good and totally ruined by its lack of compatibility.
there is an animoog preset pack that focuses on expressive touch---it's not through moog and the name of it escapes me atm ---i will check when i get back to my ipad--but they are amazing.
TF7's pads are fun too
i think the lexington keys are terrific
The keyboards are all fixed velocity. No aftertouch. Not all of them have pitch bend or modulation wheels.
