Really though, you have plenty, probably more than you need to get started.
Whether or not you have enough? You probably never will, as long as new things keep being developed.

Yeah depends on what you do with it all. If you record vocals, I could see the need for fx aimed towards that. For some music even Auria with those plugins would be enough.

You started with the intention of making Symphonic music and looked into Notion with it's sounds libraries. But your purchases show that the synth forum influenced you towards synth purchases and everyone of them requires a learning curve to master. So, it's not surprising your feeling like your not progressing.
But I'll bet your learning a lot and making a lot of sounds.
If you're just reading the forum and buying then you might have a kind of writer's block which is really just the fear of failure. Be assured there is no failure in music. Just work towards making something that pleases you. Share that with the forum and you'll get some good feedback and maybe a little criticism: almost always about technical uses of the Apps.
One path to symphonic music is to grab a MIDI file of your favorite symphonic work and
use your DAW to create a totally IOS generated recording of that work. I went with Beethoven's 7th 2nd movement and started using the Auria Pro sound to play it. I ended up buying a lot of iSymphonic libraries and made a pretty decent replica of that work.
I think the next step would be to destroy the Beethoven midi notes and create a work for that same orchestra since you've really dialed in the voices, tympani, etc.
One very cool trick is to start repalcing those orchestral intruments with your synthesizer sounds. The orchestra will become something you have created along with the midi composition, That's when all the purchases and learning about apps will start to pay off.

It took so long...but then life got busy.
In my spare time I would look as buying apps and not making so much music. I'm getting less busy now, so I want to try some smooth jazz next.

Wow. You did already start. That's like John William's film music. So, much work.
You did deserve a break after assembling to that level of detail.
I can see why you might take a break after getting that done. If you have the budget you might start getting more sound libraries to increase the realism or turn left and add synths to create something with all the emotional effect and an added sense of wonder that these synths bring to the sounds.
Extending this piece with a section that merges with your current ending would probably get you back into creative mode. Try to hold interest with 5 instruments and you get another couple of minutes added without so much data entry. In your dreams does the score you create get performed? If not, do you really need to create a paper trail for the music? That's probably where 80% of your effort went... creating perfect notation of the music. John Williams uses orchestrators to ink in all the details. He creates the music using more of a shorthand and doesn't labor over the exact instructions for each player. I'd like to see more of that shorthand. Wouldn't you?
In 10 years most kids won't be able to type on a keyboard... most will probably dictate their "papers". Hopefully schools will let them turn in videos for their "termpapers". How is your "longhand"? Essential skills evolve with technical improvements.

Getting an orchestra to play your work is probably a bridge too far. Paying an orchestra of contractors to play your work for a recording is more likely.
Unless...
If you dream is to hear your music played live go find and pitch an smaller orchestra conductor on a commissioned (or donated) work. You can build the piece and get a sponsor to work with you along the way and have a stake in sponsoring the work.
Having a student soloist can add the student's instructor into the team and make your dream their dream.
Envision "A Premier of J McMillan's Concerto for Guitar and Flute in Asia Minor" featuring the Podunk County Honor Orchestra in 2020 at the Grand State Theater ($5 donation to buy
tympani for the orchestra).
Everything is possible if you add effort and believers to a dream.

Make some more tracks and videos. Score a cool video. Either way you'll use your skills and have something to show for the effort.

I haven't dug into SampleTank yet but I think it allows 8 instruments to be configured at a time on 8 MIDI channels. Clearly not enough for an full orchestra piece in realtime but you
could pick 8 at a time and record audio using IAA.

I'm afraid that an AUv3 SampleTank will be called something else like "SampleBowl".
Get the pipeline reference? It will be free to download or start with a Lite version and have over $300's in IAP's.
I'm about $60 into iSymphonic which claims AUv3. I can typically only run it once. It doesn't even have a single decent snare drum. Just one with a Flam (That's 2 quick notes in succession with the first intended to be a grace note). Try using that to render Bolero. The drummer sounds drunk.
Crafting the perfect orchestra on IOS is really hard in realtime. Auria Pro has a Lyra Sampler that is probably going to get as close as I can get using some SFZ or SF2 Libraries. Still investigating. Auria Pro will set you back $50 and then you'll want those FabFilters for FX at $20-30 a pop.
I think @Kuhl has put the most effort into this type of IOS use case. Check out his Mahler Symphony and String Quartet on SoundCloud. They sound real to my ears. Lot's of work getting the details right.

@McDtracy : Maybe Sampletank “Orchesral Percussion” has that snare drum, lol.
I’m already a few hundred $ into Sampletank. Still cheaper tha d buying a new laptop and then Komplete , Antares Vocal VST’s etc. The $29 Fab filter plug ins are going for $179 on desktop. I for one will be going All in on the auv3 Sampletank whenever it comes out .
Have heard good things about Zeon. Does it overlap with Twin2?
