Good conversation! Thanks to the original poster and to all who shared their expertise.
I had a great few hours last night playing around with Bismark and exploring different soundfonts, and started the tune I'd been wanting to compose for ages. Which is nice.
For anyone who is interested, I found a free alternative to Goodreader: iZip. It has ads (unintrusive though) and at first is a little confusing as to how you unzip something, but after you learn that in a minute or so (depending on how inebriated you are) it's easy as peasy. It also offers uploads and downloads to and from Dropbox, which is where I've decided to store all these soundfonts for convenience.

We do have an entry in our FAQ for the layering of sounds at http://www.ikmultimedia.com/faq/3364 but I'll relay the fact that it still isn't intuitive enough or have enough info directly in-app on the topic. Should we create a popup about it? ducks I kid, I kid.
What would be nice would be the ability to layer sounds using the native keyboard.
