is there a midi panic button in aum?
something to switch off all stuck midi notes

You have all notes off button per instrument only:
If you have stuck notes, also make sure to find the offending app and contact the developer (stuck MIDI notes are ALWAYS a bug) to improve everyone's lives

but how to find the "responsible" app?
in my case it was autony ->cality ->phosphor.
is it the note generators, or the synth that should take care of ?
For each of the involved apps, remove it and try the same situation again. If you still get stuck notes, re-insert that app, and try removing the next one, etc., until you find the app that when you remove it, you don't get stuck notes anymore. It might be more complex than that, but that's a good start
In most cases, the problem will be the MIDI generators / processors (in your case, Autony or Cality) and not the destination (Phosphor).
