Only real drum replacement feature or stand alone app I'm aware of is the IAP of Drumagog inside Auria Pro. It's only usable in Auria and I've never tried it. It is the desktop standard (or at least was for years) and the videos for the iOS version I've seen seem to show it works pretty well.
Afaik it's still standard, as Steven Slate's Trigger serves the same paradigm.
Imho such software is very unlikely to be a 'killer app' because in real world use it's a lot of work - which applies to multitracked drums anyway.
The operating principle is as simple as can be, but mix context is an entirely different thing.
Trigger is a great tool (have it myself), but rarely use it... and it's (only) that experience that shrieks me away from Drumagog.
Depends a lot on what you're after: regular multitrack drums take an enormous amount of screen estate (considering tablet size), but to replace some individual instruments without kit context should work well.
