Just tried, and I couldn’t see an easy way to do it. I usually create a new track for the instrument I really want to use and then copy the clips I want to it.
Hey.
Xequence normally manages tracks automatically because that is sufficient and most convenient for many situations. In that case, it is really easiest to just move clips between tracks as suggested by @Hypervox and @ReflectiveHaze . Just select the track by tapping on it in the left sidebar, then tap on "SELECT" -> "Track" in the bottom toolbar to select all clips, and move them using the vertical handle.
If you need to re-assign instruments frequently or want total control over tracks (including having tracks for the same instrument at totally different positions), you can always disable automatic track management for a particular project by going to the "..." screen, then the "Project" tab, and turn off "Automatically manage tracks".
You will then have the ability to choose a target instrument for each track in its "..." menu.
