I think the only people who damn it are those to whom it doesn’t sound 100% like a mechanical piano. To be honest, it’s close enough, and overcomes some of the issues of sampled libraries.
Nothing will really replace a real piano, but this comes remarkably close.

I'd guess the most likely thing is that since they already have their own store that they don't want to deal with the App Store and don't want to hand Apple 30% of their profit.
I've been following them for some time now. Their historical instrument recreations are really interesting. The physical modeling approach is really strong for this sort of thing.

To a degree, yes. But, it actually takes a significant amount of time to release and maintain stuff on the App Store. You have to do all this marketing material that conforms to the way Apple wants to market your stuff. That may not fit at all with the way a company wants to present their products. Modartt already has a store the way they want it and a method of delivering new content. Making their stuff fit with the App Store and in-app purchases may be more of a pain and cost than they want to put themselves in for.
Depending on how much they think the can make off of selling on the App Store versus the time and cost of putting it on there, they may project that they won't make anything on it. It could be that they have plans to sell it on the App Store but they've been too busy taking loses on selling it on Linux
