AUM sample rate
I’m using my Norns shield a lot at the moment and imported samples need to be 48khz. If I change the sample rate in AUM to 48khz ( it’s currently 44.1) so that any recordings I make are easily transferred onto my Shield, will this affect existing projects? Or create any other potential conflicts down the line?

It depends on the plug-ins you use...
Some are optimized for 44.1k and can sound 'out of tune' when using 48k.
So just change to 48k and check if everything works as expected...
(There's too little info for more detailed answer, sorry).
Btw, it isn't really a question of those plugsins being optimized for a particular sample rate -- they simply fail to account for the host sample rate. It can happen in either direction. And some hosts (though I think most have fixed this) don't correctly account for the hardware sample rate. When both plug-in and host fail to account for the sample rate that is relevant things get especially confusing.
