Two, well three paths for you to go down.
• Get a USB mic which have built in a DAC
• Get a small audio card like the Behringer UCA222 and hook up an analog mic to it. Depending on the mic you'll have to get adapters because of its RCA inputs and outputs.
• Get an audio interface with at least two inputs (4 would be better in the long run) and hook whatever mic you want to it be it XLR or otherwise and USUALLY the preamps are better than in the USB models
If you want convenience get the USB mic. If you want the ability to upgrade from a mic you can afford now to something much better get the interface. If you want tiny portability get the Behringer -- but there are other portable interfaces like ones from Zoom or Tascam that might do better and will allow an upgrade path similar to a dedicated desktop interface.
As for what kind of mic -- that's a bigger and more personal issue and there are threads here on the forum dedicated to that.
FYI on mics and interfaces:
I got a MOTU M2 for an on the go interface (USB-C powered) and a mixer a Soundcraft Notepad for my stay in one place setup. The mic I got from Ebay was an older version of a Lewitt 240 XLR mic. the current ones run $230. There are a lot of mics in the sub $300 that are damn good like the Rode NT-1, and a few like Samson and MXL that are much more inexpensive but still better than what you have.
Just found this as an alternative to the just plug into your ipad and go.
