Same. This is one reason the iCloud Sync is such an attraction for me with this. Wherever I am, with whichever device I have at the time, I have full access for reference and can at the very minimum capture ideas - leaving the heavy lifting for when I can sit down at home.
I just edited one of the files in the vault using Textastic, and the change was visible instantly. And I mean instantly - real-time. I didn't even need to save the file in Textastic.
This is a Vault stored in iCloud. I suppose if stored somewhere else it might be different.
[Edit] Everything they say indicates you should be able to edit your documents in any tool. I've not seen anything in my own experience to contradict this so far...
How we're different
We want you to own and control your data
We believe in plain text for something as important as your knowledge base. You don't want to put your own brain over someone else's neck, do you? Treat your second brain the same way.
Sync is only a utility to facilitate working on multiple devices, the data will always primarily live on your hard disk.
When the file system replaces the cloud, you get flexible options to work with your files: you can back them up with Dropbox, use Git to do versioning, or encrypt your disk for security. Whatever works on your file system will work on your Obsidian knowledge base.
@tja I’ve even been editing my Obsidian theme CSS on a desktop text editor in the vault (iCloud) and seeing the changes reflected on my iPad in real time. It’s pretty good.
@tja : It’s certainly the case that Obsidian is not like Dropbox selective sync, which allows you to decide which folders you do or don’t want to sync across your devices. Obsidian syncs everything in your vault folder, no more, no less. You can drop things in your vault folder and they’ll sync. You can add folders to your vault folder from outside Obsidian and they’ll sync. You can edit files in your vault folder with other apps and they’ll sync (though on iOS presumably Obsidian would need to be running in the background). So if you want to have notes sync’d across devices via Obsidian, they need to be in the vault.
I believe this also applies to linked and embedded files. If you want to embed parts of a PDF, the PDF needs to be in the vault. There is a mechanism to link to external URLs which I’m less familiar with. I think on the desktop you can have links which cause an external app to open to display a particular file type, but I don’t think you can embed portions of those files.
@JohnInBoston What happens with those external app links in iOS?
Well, I do know that the regular file system has the ability to notify othe apps when there’s a change to a file. I can save a file in Blender and if it’s open in Cura, Cura recognizes that and prompts me to reload the file. Textastic senses this too. But neither has that instant linkage to the file for real-time updates.
I’m happy to have it all in iCloud so it’s updated in all my devices. But I don’t deal in anything I would care about anyone hacking.

Have you tried Cryptomator 2 beta for iOS?
They promise "full integration into the Files app". Seems that there's no offline files or open-in-place support, but still looks promising. Haven't tried it myself though

Same thing. There's no concept of "logging in" to a vault, a notion you may perhaps be bringing over from some other app. Opening a vault is analogous to simply opening a folder in a files app. Adding a vault is akin to making it show in the app. Removing is making it no longer show - it does nothing to the vault itself.
[edit] ... oh wait. Maybe you're talking about Cryptomator and not Obsidian now. If so then nvm.
Working Copy now supports external folders
I'm very much a plain text person and have been using Obsidian for a few years now even though I usually avoid Electron apps. I've also been a DevonThink user even longer. Plain text is what I use for data capture, DevonThink for search and analysis.
But I have been dabbling with Craft since January, mainly because it integrates fantastically with another essential new macOS app 'Hook' (Hook provides deep linking to many different items but my most used is deep linking is within PDFs). I don't have an issue with either Craft or Hook being subscription products because they're both priced at a reasonable level. But I do have an issue with data portability, it's one of the reasons that I've historically stuck with plain text Markdown notes. However, Craft has really upped it's game in 2021 with regards to data portability and I'm seriously considering a permanent move to Craft since they introduced their external locations feature. This means I can still use DevonThink with my data and sync in plain-text notes that originate from Linux and Windows. I don't ingest my data into DevonThink, but instead, only use DT for indexing. DT in combination with HoudahSpot means that I rarely lose sight of linked information.
With Obsidian being an Electron app cross-OS support is built-in. But the reality of things is that I generally perform all of my productivity tasks in the Apple ecosystem so that key Obsidian benefit is less of an issue.
