[Solved back in 2021!] Is there an app for converting audio to mp3…
… and also allows me to choose output quality (320 kbps etc) and to write metadata (author, album etc)?
It’s exasperating that that one basic thing that is so trivial on any platform (including android) is so freaking hard on iOS, and the excuse of “bit.. bit… mp3 is priprietiiiiry….” won’t do anymore, since it’s free since at least 2017… /rant
If anyone knows of such an app, or DAW (Auria Pro won’t do it, how disappointing), please let me know.

Twisted Wave is what I use for doing this. IT allows format conversion as well as meta data editing.

If I recall correctlyTwistedWave Recorder is free and allows mp3 export and also additional features via IAPs).
(Maybe it's even possible to create a Shortcuts Script to do the conversion?).
For me mp3 is practically a dead format...
Most Android devices I've come in touch with play *.mp4 files just fine, rename *.m4a to mp4 and you should be good to go...

MP3 converter is decent, and goes free every other month or two.
