Huh, I didn't really buy many new instrument apps in 2021, mostly effects and sequencers. Most synths I bought were released before 2021. My three highlights in new instruments are all drum machines:
I'll give a "most improved" shout out to Decent Sampler too, the dev did a ton of releases and greatly improved it throughout the year
