iPhone 8 Plus support?
How safe are iPhones without official support?
Looks like the iPhone 8 Plus will lose support next year, though I think they still release security updates for a little while after losing iOS upgrade ability...
Whatever the case, if an iPhone 8 Plus no longer gets ANY support from Apple, how safe is it?
Would it be okay if I simply used it for music making and the phone? In other words where do the vulnerabilities generally come from? Web browsing? App updates? WiFi use?
And help is appreciated.

After searching around a bit, looks like vulnerabilities are from things like bad links, WiFi and Bluetooth hacks, and potentially apps as well.
So you could potentially navigate things by not downloading suspicious apps, and not using WiFi in public places, etc. And the risk would be relatively low.
I'm using an iPhone 6. It's stuck on iOS 12. The last update was a security update to 12.5.5 on Sept. 23, 2021.
There's no guarantees, but they do tend to keep going with security updates for critical vulnerabilities for a long time.
The 8 was still selling less than two years ago and has the A11 in it. I wouldn't be very worried that Apple is going to cut it off from updates soon. It could happen, but these things are usually driven by a processor not being able to run a significant part of the new OS and the A11 is plenty capable.
