How much can upgrading from A12Z Bionic to M1 and increasing RAM from 6GB to 8GB give?
I'm considering a new iPad Air 5th gen. It has an M1 processor and 2GB more RAM than my current iPad Pro 11 in 2020. How much can such an upgrade give in using music apps? I did a comparison using the everymac.com website and took a screenshot and then removed what I think is irrelevant (I've never used Lidar camera, or other such stuff.) But these are just dry technical facts. How does this relate to creating/performing Music?

I wouldn't personally upgrade from the 2020 Pro yet. But there is a pretty significant jump in single core processing between the two. There's good increase in clock and the new cores are going to have a significant increase in IPC too. For most audio stuff on the iPad, I'd say this is going to be more significant than the increase in RAM.
Early June might give some good hints about what to expect out of the new M2 cores. Unless the 2020 Pro couldn't handle what I needed now, I'd wait for that info.
Honestly? Not much. I’d say wait a bit before buying a new iPad.
I honestly don't recommend the new iPad Air. You get 2 speakers instead of the full stereo from the Pro, the loss of the headphone jack is still a limitation for my workflow (despite the benefits of USB-C), and the M1 chip, while impressive, lacks the variety of apps to properly utilize it. You'll be better off waiting and seeing what apps do eventually take advantage of it before making a decision to get it, and by then the newer chips should be on the new iPad.
I got mine late last year (iPad Pro 11-inch M1), from an iPad 6th Gen, and while I like the benefits such as the pro refresh screen, and the speakers, it's not magically enhancing my workflow. I can still make music just as easily as the other, except I don't get much "Optimizing Performance" on Garageband. Which honestly, I got used to it.
