What app is he running on the iPad? Either it's Lemur or equivalent, or an advanced Loopy Pro template or something?

Looks like a bunch of buttons, knobs and XY pads thrown together with TouchOSC.
Lemur is more powerful, no question, but if all you need is a bunch of controls like these, TouchOSC is the quicker solution.
What I like a lot in his setup is that he's done quite the opposite of what musicians usually do: Instead of getting fancy new gear and finding out what to do with it, he had a vision of composing music spontaneously and put a lot of thought into what he wanted before actually finding ways to make it all come to life.

I'm sure he did! The secret is not in the control surfaces but in everything behind it. He could certainly replace all the iPads with MIDI controllers but there's certainly no replacement for his Ableton Live plus custom devices setup.
I really wish more people would create their own workflow like he did.
I haven’t been paying much attention to him for a while, it’s so awesome to see his streamlined setup! I had once read that he created custom software for this over the course of several years, but you suggest Ableton? Could very easily be Max, I’d just never thought about his actual DAW
I saw him perform at Shambhala a few years ago and he ended with a rhyme about needing to get on a plane after his set and “pthbthbthbthbtt” 😂
@tehskwrl Ableton and Max4Live is at least what I would use if I had to build it on desktop.
For many years Dave Gamble at DMG Audio was helping him with custom software for his live sets, you can read about it on the DMG website. Not sure if that’s still the case as it looks like he using a more slimmed down set up now.
I went down the rabbit hole from @Tarekith mentioning DMGaudio, and eventually found a 2.5hr YouTube stream with the Hexler TouchOSC guys from October.
I didn’t watch the whole video, but he says at the moment his iPad interface is all custom coding in Lemur. On the YouTube stream he sounded interested in switching to TouchOSC.
