iVCS3 double iPad?
Can you use iVCS3 on two ipads at once? So you have access to both knobs and matrix pins at same time?
Or maybe have one ivcs3 controlling other ivcs3 via midi/osc?
My iDevices are old, so one has ivcs3 2.x and other just ivcs3 1.x before huge update

I did this with Model 15 (regular ipad for the animoog style keyboard, big ipad for the Spaghetti Monster). Used MIDI-over-Bluetooth and it worked perfectly; negligible latency. Don't know about iVCS3, though, since the lower panel isn't straightforwardly a controller ...
The patch matrix doesn‘t have any midi control, but (imho) is a 1st class target for a remote solution.
There are multiple ways to encode the 16x16 state of the resistors/empty.
(from strings to bit arrays)
A fake Bluetooth keyboard, that transmits whenever a pin-state changes, comes to mind.
Changes of state can only happen at a low interval rate and the message is compact.
Not sure if a hardware implementation makes economic sense, but a helper app on an iPad mini would do the job perfectly...
Sorry, iVCS3 doesn't output any MIDI, so it can't be used to control another instance.

Then, specially made template in lemur or touchosc might be possible?
For dials, yes. For the matrix? I don't believe so.
