is there an app that lets me use the gyro features of the iPhone to modulate parameters live?
I was looking at Gyrosynth but it looks like its a self contained synth and the gyro modulations are applied to itself and not external.
Are there others that send midi out based on the motion of the phone?

Yessir! The latest and greatest is the award-winning MusiKraken. Honestly, it's got so many other cool features that I'd just start there, even though there are other options.

Steel guitar let’s you map tilting to the 7 pedals but it does NOT output any MIDI events. It just activates the pedal on the internal sound engine. It would be nice if it did. I suspect this means these pedal events would not get recorded in a DAW… that should be considered an oversight.
I don't know but it might work in Gestrument pro.

There was AC Sabre a while back, dunno if it's worthwhile.
AC Sabre is cool. Mainly geared toward generating MIDI Notes rather than CC's though. I haven't used it for a long time, so don't know if it still works smoothly after all this time.
