Midi apps
When I’m shopping for new apps, I often wonder if any given synth has midi and will work with my midi controller….is this a concern that I should have or can I assume that everything has midi?

There are a few odd balls that don’t have MIDI in (typically drone synths, e.g. Esoteric Synth being one - but still very cool and worth purchasing), but my strong guess-timation is that 99% of AUV3, inter-app and standalones have MIDI in. That’s speaking from experience since I have purchased it seems like 99% of them since 1st generation iPad 😂
If it’s an AUv3 app, it pretty much has to speak midi by definition (or else how could a host app send it note data). Apps that aren’t Audio Units? Assume nothing. Also, in the music category, it’s worth taking a minute to see when an app was published and how recently/frequently it’s been updated. There’s some very old stuff out there that is not broadly compatible with modern frameworks.
The list of apps without midi can probably be listed on one hand if it’s got IAA or AUv3. But someone might quickly put out a list of 6 apps and then we can say sure “but that app is tied to the camera”. My favorite out of the box thinking is Ocarina that provides a screen modeled on the ocarina physical layout and you blow in the microphone (from a few inches out) to start and sustain the notes. So, cool if you know the ocarina fingering details. It sounds just like one.
So, I got one. The original Steel Guitar (not Pro) did not have midi and provides an elegant slide guitar screen to play it.

Must be a few more… tho’ you said synths so these 2 are not really synths.
Definitely no guarantee though that apps will have, say, midi learn, just in case that's what the OP is talking about. Of course, parameters are usually exposed, but not always, and some devs are not good about categorising their exposed parameters into submenus, even when there are sometimes hundreds of exposed parameters. On this point, I would love to see AUM get a search bar for parameters, even though the recent addition of that little midi nudge feature has done a lot to ameliorate the need for that.
