If you've bounced MIDI to audio, then it's not really possible to undo. You might find an app that can convert audio back to MIDI, but that won't recover any of the patches you used in the original instruments.
Rather than bouncing you should freeze tracks instead, it will achieve the same savings on CPU power (because it will convert the track to audio behind the scenes), but you can easily go back to the initial state by unfreezing.
Mind you, in Logic when you bounce MIDI to audio it should preserve your original track by default, and mute it, unless you selected the option to delete the original.

Are we talking about IOS or desktop?
On iPad, the original (MIDI) track should be right above the bounced track, generally muted and/or deactivated. If not, then maybe you deleted it manually and as Richard said I don't think of a way to recover it unless using some audio to MIDI trick.
A2m (audio2midi) is free with a time limit. IAP to remove time limit.
MIDI guitar 2 is another app that will do audio to midi.
Depending on the material it can vary from quite accurate to not very accurate. Give it a shot.
these are old projects, I don't remember what i did. I don't even have some of the plugins anymore.

The projects are huge, so I tried the revert to function. The only problem is I either have the full project with bounced tracks, or an earlier project that is incomplete with the midi tracks.
I was hoping the midi was somewhere hidden in those huge files. seems I fucked myself up.
@bpert I'll give it a try, but I'm quiet sure it wont be faster to edit those audio to midi convertion vs just rewriting the music and play it.
