Completely agree with your statement that guitar sounds today are still not very well represented generally on iOS/iPadOS. More attention has traditionally been paid to amps, pedals and effects for people to route "real" guitars through. Personally, I prefer the guitars I'm getting out of Logic Pro on desktop and I continue to refine the ones which come with Logic for my own purposes since I prefer a completely clean signal which I can then use to add my own effects to. I have found it particularly difficult to get a good "chugging" rock/metal guitar sound and muted picking are also not very well represented among the options I've dealt with. I know someone is going to solve all of this eventually, but these are not easily addressed simulations.
