Setting up MFX Convert in Loopy
Google not helping.
I added it as a midi input because that's the only way that loopy can see it.
Is there any documentation anywhere?

After adding mfx convert as a midi device in the mixer, make mfx convert a destination for the midi you want to
process.
Make whatever you want to receive the midi a destination of mfx convert.
Where do you want the output to go?
It can also be used as a source for midi when setting up MIDI bindings.
This raises the question: is it possible to hide or collapse groups of tracks (mostly midi controller tracks) in the mixer?

I want to transpose the range of the keyboard output up an octave.
Do I need to transpose each note of the entire range?

Yes, you would have to do that with mfxConvert. mfxStrip is the one you want for transposing.
Unless you have a special use case, Loopy has built-in transpose for every midi source...
