Can you say more about what you mean?
Take a look at the destination options of any midi destination. You can filter and re-channelize the output.
I'm playing around with it, and perhaps should do that some more before I go into great detail -- I may be missing something obvious.
Fundamentally, I'm trying to figure out if, in the settings for a midi clip, one can set a particular clip to output that clip's midi data to a designated midi channel. Or if that can be done for a color group.

It appears that channels are tied to colors. But this strange language from the manual: “ You can also specify a different output channel for each colour, if you are using an audio interface.” Only if you are using an audio interface? That doesn’t seem right.
Also, although the manual says add as many colors as you need — for me, after 21 colors, they start to repeat. If colors = midi channels that would seem to put a restrictive upper number on those. Also can’t be right.
This is something I can only clarify with more hands-on, and here we go
Output channel in the passage you are quoting is about audio outputs. Not MIDI channels.
Colors do not equal midi channels.
