Xequence AU Keys - No chromatic “scale” option?
I watched the walkthrough here (there doesn’t seem to be any textual documentation that I can find) and I find it hard to believe a keyboard plugin doesn’t support the basic chromatic scale key arrangement – all 12 tones. This appears to force the user to implement a scale. Is it there but I just can’t find it?

Hi. Not sure what you're looking for here. You can have either the conventional piano layout, or plain chromatic, as shown below.

It seems there is no “none” option for selecting a scale. If I try to play a note that is not part of the currently selected scale the note is raised or lowered to stay within the scale. Selecting “chromatic” from the pop-up menu at the bottom left simply changes the keys to be all “white” keys. Playing the keys still “auto-corrects” the note to be within the selected scale. I can’t turn it off.

If I select "Chromatic", every single note is played. Selecting Chromatic is how you get nothing selected in the panel of scales on the right. Are you sure you have that selected as shown below?
Have you looked at the note labels on those keys? They should be labeled with the notes of the chromatic scale if "Chromatic" is highlighted. Also, when you tap Chromatic, that should clear anything you have selected in the Scales panel. If not, that's just bizarre.
Are you sure there's no filtering happening down the line in the routing, such as running through a scaler plugin, or set in the app you're playing?
Ah! That was probably it! I was running into an Atom 2 instance and there may have been a scale set on it. I’d duplicated several channels in AUM and might have not realized that a scale was selected. I didn’t save that session, but in a scratch session connecting AU Keys directly into an audio plugin and I’m no longer getting that behavior!
