I just tried to post something but was told it needs to be approved first (guessing 'cause it was just a link and a video). So I'll just relay the info here w/o links:
Check for the Modal Pro app. It's not AB (although it might be IAA), and is a Modular synth app which is all about teaching the process.
Also check Tim Webb's (guy who runs Discchord) videos "Intro to Modular". Those are very good and informative on teaching Modular synthesis via-iOS.

Caustic includes a modular synth that I think is relatively user-friendly. The nice thing about Caustic is you get all the other stuff that goes with the modular
. It's a self-contained environment for making your music - there's a drum machine, bassline, etc. Follow along with the tutorial to get the basics down for the modular:
