Well, Joycons are wireless Bluetooth controllers with gyroscopes. You could use them as page turners, or as modwheels for expression based synthesizers.
The reality is unless someone dedicates the time to make an accessible and fully supported application (looking at Nintendo), the impacts on the iOS music platform would be minimal.

We can already do gyroscopic midi CC on iOS. TC-Data, Midi Designer Pro 2, and Mozaic are a few examples of apps that support it off the top of my head.

There is an app called Miditrol that supports Xbox and ps4 controllers, not sure about other controllers.
Unfortunately, the GAMES despite the fact that are finally displayed as full screen without black bars on external monitor or TV in iOS 16, are rotated by 90 degrees. I wonder if and when Apple will fix it...
