Mozaic request maybe? There’s possibly something like that already, didn’t @McD do one ages ago that you hammered out a rhythm on that created a melody?

The original device that did this, I think, was known as the Samchillian, and there's also commercial products that are more polished, one known as the NDLR, and then Eventide's Misha. You can search for them on youtube to see them in operation.

Although it looks like an interesting idea, I've had experience trying both the mozaic and In-Theory app and yes, in theory, it looks like it could be useful but in practice for me it's unintuitive and confounding.
