What's the reason so many synths have sticky note problem?

It doesn't happen to me when I play on the screen but whenever I connect them to my midi keyboard bunch of apps have the same issue. Keys get stuck, some don't even have panic button so you try to find the key that stuck try to unstuck it. I also contacted handful of developer and it never got resolved. Only solution I have that when I play the synth by a DAW it lot less likely to happen.

    This looks to me like a problem on the MIDI input side. Mostly caused by NoteOff messages not getting thru. If your keyboard is sending MIDI clock messages to the iPad, then try to disable these. I had it once that a (cheap) MIDI interface started dropping note on and off messages because it was "overwhelmed" by the clock messages.
    What type of MIDI keyboard are you using? How is the keyboard connected to the iPad (USB, Bluetooth, MIDI adapter)?
    Have you tried to have a look at the MIDI input with a MIDI analyzer like the free ShowMIDI app?

    Use a midi monitor to see what midi is reaching your device. From your description, it seems possible that the issue is with the midi you are sending.
