Recommend AU piano?
Looking for good quality AUv3 piano. Is CrudeByte the only one out there? Is it recommended around these parts? Stable?

I would say the Colossus Concert Grand Piano from CrudeByte is indeed with 14 GB is the most detailed sampled piano you could get for iOS and it is an AUv3.
The demo sounds great but since i´m saturated with good pianos i didn´t bought this one and it is not cheap with 50 bucks for an iOS instrument.
But i didn´t heard any other great pianos yet on iOS which is good enough for a solo or at least in a piece where the piano is the focus.
Both crudebyte piano apps are the only options available.
If you have the money and the storage go for colossus piano.
They sound decent to mine ears, just don't want to get blindsided by potential showstopper bugs. (Like not being able to bounce etc)
There's one in the Yamaha fm app and don't forget Tines
Is there an organ available as AUv3?
Don't think so, not if you mean a proper organ emulation like Galileo...there are of course organ presets in some of the AU synths.

Garage Band has some great Organs.
Edit: But no AU then....but several instances are possible at least.
Yes now that I've committed to GarageBand I'm enjoying these. The EP Rhodes is not bad either if you put an Overdrive effect on it
Sadly also a bit limited like Alchemy in GB.
The B3 Organ in Logic is awesome and has very deep editings, morphing etc. Indeed my favourite Organ instrument.
One day maybe they release the full versions for iOS.
I was working in the new Logic Pro update today and it seems clear they are slowly preparing the GUI for touch screen.
I thought that too. The updated instrument/FX/GUI looks like they would be usable for touch as well.
So who knows?!?

Yes indeed, though once I made it full screen and got down to work. I almost did the previously unthinkable: reach out and tried to touch a control. I barely caught myself before anyone noticed.

First world problems.. I can't even use a regular laptop anymore without trying in vain to operate by touch.

Same here, I was setting up a laptop for my daughter that we got her as an xmas present...she kept laughing at me as i was desperately and in vain trying to press buttons on the screen
