Used a trial version of an app called Reflector on my old MacBook Pro. It works via airplay on the ipad. The trial version allows you to record maximum 10mins at a time which is enough for a short youtube video.

Sorry for necro bump but my current list (oriented towards live recording and composition):
Assuming you already have the must-haves - Audioshare and Audiobus. And obviously you have apple Music Memos for recording whilst standing at the bus station. And you have Garageband to show non-musicians how cool iOS recording is and the value for money is unbelievable.

    1) Auria and any plug-ins you can afford ESPECIALLY ProQ
    2) BiasFX for guitar amp (and Bias, Bias Pedal - JamUp too for the music slow-down feature for practicing) (honorable mention ToneStack)
    3) iFretless Bass - if anyone can top iFretless for recording bass please let me know
    4) NeoSoul Keys (apparently they have a big update coming up too)
    5) Colossus apps (especially Colossus Piano, especially with e-Piano)(ePiano IAP currently is better than NeoSoul, but maybe the NeoSoul update will be better?) - the sample rates on these apps are a step-up for iOS sampled apps - requires newer hardware though and LOTS of memory. Colossus iSymphonic is gorgeous and my go-to strings sample app
    6) Korg iM1 - I'm not a synth geek so this provides nearly any synth preset I'll ever need
    7) Symphony Pro - for people who want to annotate and write sheet music - you can input with Midi and it transposes into written notes for you - pro level app
    8) Final Touch - for mastering - adds nice polish to your finished songs
    9) GuitarToolkit - every chord on the guitar + tuner + metronome + scales
    10) GuitarCapo - its just fun
