Model 15. For once I can safely list just one. Based on time spent using it and quality of sound and design, this one ran away with it this year. So far ahead of everything else that I can't throw out an honorable mention off the top of my head.

Not that I use it a lot, but I'd have to say Blocs Wave. When it came out the reaction was lukewarm, then it transformed itself into an amazingly versatile tool.

No particular order:
AUM: It opened up a new world of iOS app jamming & especially trying different recording chains. To me it is a complement to AudioBus, IAA & your DAW not a challenger to relace it.
Model 15: For someone only a few years into synths & keys real deeply, I am continually amazed by the sound & possibility of this app. Sometimes it's meditative to sit and play with it, creating sounds for well over an hour before noticing how long I've been messing with it.
Drum Session: Derek B. has already shown how amiable & genuinely interested he is in getting the community's input on changes & upgrades. I can't wait to see what this already great app is like in 6 months.
DDMF Neve Portico EQ AU: This EQ is so surgical & effective it is my go to EQ. There are other good EQ's (the EQ in Auria's PSP channel strip is quite good), but unless you want to fork over $35 for the Fab Filter EQ to me the best option is DDMF's AU EQ.
I just can't remember what was out in 2016 and what came before. It's all a blur of app goodness.
2017 will be tough though, as I'm pretty much app'd out now. I really need to settle down to getting more out of what I have

Very honorable mention to KORG for amazing advances with Gadget in 2016. The introduction of nanoKey and nanoKONTROL Studio, 3 new Gadgets in July, plus ODYSSEi and iWAVESTATION, for a total of 5 new gadgets plus numerous IAP, including a Mellotron in Module. Korg also made many significant improvements to Gadget itself.
There are 28 gadgets now, and there are really more, because things like Triton and a Mellotron turn up in Glasgow instead of getting their own Gadget. Imagine what it will be next year.
BTW, I l love iM1, but it came out in May 2015.
Sidecar.
Humble perhaps compared to all of the excellent noise-makers and tools that arrived in 2016, but Sidecar makes every live performance so much easier and more enjoyable for me. Thank you, @SecretBaseDesign!

There have been so many brilliant apps released this year it is hard to see how 2017 is going to be as good.
Yeah I still need Gladstone and Madrid....well want, not need
