@Doug I bypassed Pro Keys many times. What a great app, and at $.99 US I had to get it. Thanks for the tip. I just shot the Dev a email.
What about a solid midi controller app that supports odd time sigs, triplets and other polyrhythms, and time and tempo changes? That way, with AB support, you could control other apps via midi and record into a DAW of choice, having them utilize all manner of rhythmic techniques.
I'm no programmer and I know very little about midi or anything, so I don't even know if this is possible. Seems like a good idea though. Would solve a lot of my problems.

Decent loop editor. I know I keep harping on this but it hasn't been solved since the dawn of iOS. The limitations and aggravations of existing apps have already been covered so I won't repeat.
A loop cutter with simple amenities like non click, snap to time/bpm/length, variable length crossfade without altering the loop length, "open in", Audioshare import, etc. Maybe some day.
Kurzweil K-series synth/sampler would be sweet, especially programming it on a touch screen vs buttons and a data slider.
I'd like to see the Korg M1, it's available on the desktop so there is a chance we might see it on iOS one day.
A MIDI looper, like a Loopy that can quantize my sloppy playing.
A soundfont editor to build multi-velocity drum kits and instruments.
An MPC style drum sampler with multi-velocity layers (will this be in iMPC Pro?)
A version of audiobus that be embedded in each track in a DAW, the way IAA works in Cubasis or plugins work in Auria. And multiple instances of the same effect app?
@gburks - Auria supports different paths, per track, in AB already.
Ezdrummer for ipad. More support among apps for time signature changes within the song, and odd meters.
korg ds-10+, m01d, and kaoss pad apps. an sfz player would be nice too.
I would so much like to have an application of the kind of iGrand or iElectric piano from IK, but this time specialized in instruments with mallets.
An assortment of beautiful vibraphones.
They could be accompanied of xylophones, metallophones, marimbas, etc... but especially a First Class Vibraphone.
A dedicated app which allows to retranscribe as far as possible the nuances and the dynamics of this incredible instrument, whith the choice of hard and soft mallets.
Naturally whith midi in, AB and background audio.
I love the sound of Gary Burton (ECM records) and I appreciate Lionel Hampton also.
For other intruments whith mallets, they would allow me to experiment in Philip Glass or Steeve Reich style of music, who I love particularly.
Some more exotic flavors would be welcome too as a bonus, I think of the Balinese music.
But especially and before any, Gary's vibraphone!
With iPads now containing 128GB, a true, full-featured classic sampler is really needed....preferably something that is patch compatible with some existing standard.

The Chapman Stick, most famously used by Tony Levin. I'd like to see that as a virtual instrument app.

Thumbjam's looper does record both audio and midi, by the way. It wont quantize it but you can export the midi to an editor.
