I’m beginning to think there’s a setting we’re missing in Cubasis or an issue with the app itself as suggested by @CracklePot. Cubasis ‘sees’ my AI as an audio device but I can’t seem to get any audio into it. Tested with Zoom U-24/iPad5 and IS202/iPad3 combos. I have no issues recording into a GarageBand Audio Recorder track or recording directly into AudioShare using the same setup. Perhaps someone who has a setup that works can share there settings?
Mine seems to record audio into Cubasis with a Presonus AudioBus AI. I think we need to work through one step at a time.
Hear the speakers work and use those cables to hear audio at the UR22 then hear/record it in some app on the iPad. The App for testing could be voice recorder or anything so we don't get lost thinking we need to push buttons in Cubasis until we're sure the sound is getting into the iPad. The knobs could be too low to hear right now and we need to follow the sound each step of the way.
There's a process for troubleshooting that works if you just verify every assumption looking for a clue to a missing connection or setting.
Jumping ahead just gets "I've done all that and got nowhere" which causes perfectly valid equipment to get returned and no problems really solved. I used to careful coach customer's through problem solving and it was usually something pretty obvious in the end but something we assumed that was the problem.
Placing Cubasis in the AB2/3 output slot seems to work on both of my combos. This is baffling.

The irony of this is that both Cubasis and UR22 are made by Steinberg. @LFS, I will write you.
At this point I don't believe I am doing anything overtly wrong. I will mess with the bit rate and buffers later. But the connections and cables seem good, the input volumes are up, the device is recognized.
I will look into the loop back feature later. Thanks for all your help. I know you all love to solve a puzzle, so I don't feel bad about presenting this problem. Let me follow @McDtracy's sage advice. Best.
iOS Settings>Privacy>Microphone...should he turn it On for Cubasis?
Microphone ON is always a must for Cubasis!
Starting Cubasis the very first time, a popup asking for your permission to use the microphone appears, which has to be accepted. If you tapped "no" by accident, please change the setting manually as follws:

Now I have to decide if the Kawai pianos are indeed better. My initial attempt is, frankly, a no. But I need to mess with it a bunch more to see if it is worth a $200 gadget whose sole purpose for me is to record the MP11se pianos. I guess I could butva microphone and start singing. That would serve you guys right with all your up all night cable checking advice! ( just joking. Your help is invaluable and much appreciated). Except you @michael. Why do I think you knew the answer all along😈?

Buy a microphone and create some piano lessons using the methods of Lennie Tristano and Connie. Is there anyone in NYC continuing the tradition of that approach. I'm interested in the ideas of how you do the practice work using various fingerings and other type of rote practice. You keep mentioning how you drill scales and I'd like to see/hear an example of what your describing.
Share your knowledge with recordings or better yet YouTube video. An iPhone makes a great video camera and you can import your video up to the iPad for editing.
If it sounds like too much work you're probably right.

Another relatively new 'security' setting::
iOS Settings>Passcode>USB Accessories...turn On so USB interface continues to function when iDevice is locked (or if screen turns off); security prompt will also appear less often.

Thanks again @ocelot! Here is an improvisation I just did that uses the Kawai MP11se jazz grand piano patch. The reason I got the UR22. I think I like it above the Ravenscroft275.

That's gorgeous and funky! The piano sounds authentic to me too. Gotta love those wooden keys and 'Virtual Technician'.
There's clipping, so watch the Input Gain on your UR22II. Usually you'll want your Kawai's output level at around 70-100%, and then adjust your UR22II's Input Gain accordingly so it doesn't clip.

Kawai DPs are the only ones that give me the impression I’m playing an instrument rather than a sample-playback machine. But if the previous generations are anything to go by, they don’t sound their best ‘out of the box’. Fortunately there’s a whole bunch of stuff to tweak in the virtual technician settings. It took me a while to dial in the sound I like. Putting an external EQ, Compressor and Reverb in the chain helps a lot. Those bass notes could be cleaned up and I’m hearing some harshness in the upper mids (typical of the Kawai sound).

Nevermind... Cubasis is not an "Effect" App. Still... close to omniscience.
@McDtracy I had this issue when iOS 11 arrived and couldn't get any app that takes audio input to record or process incoming audio without enabling it in iOS Settings>Privacy>Microphone. The apps 'see' the Apple microphone and the external audio interface, but there's no audio coming in if that setting is Off. I don't see any changes with it on iOS 12.
I was thinking that the outputs on his Kawai were broken (had that issue with the plastic jacks on 1990s Kawai synths) but I saw that his Kawai MP11se is $3k, so probably doesn't have the same type of jacks as the K5m.
I did see that he confirmed that his UR22II was getting input (clipping LEDs + headphone output from UR22II...)
