Would it be possible to use midi velocity echo script, but keep the volume at 100% on each echo added. Or just add slight variations in velocity
Yeah, but it will first quantize everything, or you have to go and set up the steps in stepbud in a way that will fit exactly your incoming midi - and not even sure it will really work. Or am I missing some way of doing this in stepbud? I definitely can’t see how to do what I’m looking for there. The only thing I want is some ratcheting, no other modifications.
Why not do it so the ratcheting is velocity activated? That would give some control over when it happens.

A square or saw wave LFO connected to a volume control or amplifier works well. The nice thing with an LFO is you can play around with different shapes and with the rate, as well as doing things like ping-pong with an amp with separate channels.Stop or bypass the LFO when not needed.
I played around with a few configurations in miRack as an audio FX, with pretty good results. I think Drambo might be easier for this though.
Super simple solution: the gate in NuRackFX. One module is all you need. Turn smooth down to 0% (or not). Hit the on/off button to toggle. Link it to a controller if you like. Add an XY pad for strength and speed. Sync it or not.
