If I go by what I'm using in my current projects (i.e. as much weight being put on "usable") it looks like a list of the usual suspects from me: LayR, Zeeon, King Digital, Sunvox and a bit of Factory. Oh, and Alchemy in Logic, if nothing else because "it's right there".
Interesting question. Mine would be the Korg Gadget - Berlin
For Ambient, I really love the sound of a handful of synths...
-Cubasis' Micrologue (makes really fat basses, and if you don't use Cubasis, then I recommend Moog Model D and Mariana for fat basses)
-Bleass' Synths (especially Megalit!)
-Waldorf Microwave (make those motherf---in sparkly pads 😂)
-Poison 202 (amazing harsh digital synth, period, for lovely textures)
-BA-1 (back to the 80s)
-Atoms (I need to dig into this synth more to be honest, but from what I've already tried with it, it sounds fantastic and perfect for creating some strange textures as well as tamer sounds)
-miRack (in February, I'll finally learn how to use a fully modular setup to create the Ambient installations I want 😂 , but man this synth is super powerful and sounds great with its many modules)
-Synthmaster 2 (another synth I only briefly played around with but like the sound of it)
-Troublemaker (really amazing synth by BramBos that really comes close to the 303 sound)
Honourable mentions go to Cubasis' FM Classics, iM1, Sunrizer and Zeeon.

Those are just my favorite sounding. (Phasemaker is more about ease of use and light weight than sound, but still sounds great.)
Synthmaster 2 is the most versatile of all synth apps on iOS.
ButtersSynth is powerful but the audio can no longer be recorded in a mixdown Cubasis 3.

Atoms is fantastic for ambient! What I love most about this synth is that the sound is constantly revolving - and that makes it easy to connect with other effects plugins to make an evolving sound.
Other than Atoms, my fav synths are Yonac's Trooper, Moog Model D, and Microwave.
There are simply so many amazing synths available on the iOS platform! This is truly a great time to be alive.
I guess I need to dig out my Yonac synths for another try. For some reason I've never cared for what I felt was the very digital quality of them. Wouldn't be the first time I thought completely differently about a synth when I revisited it.

Magellan 1 had that digital vibe I felt, but Magellan2 & Trooper are a step up in sound quality. I use both fairly regularly.
We can do better than that. Fifty pages minimum.

Another good FM option is Yamaha FM Essential.
WoodSynth and RingsFX both can sound absolutely beautiful and very compelling.
I know I’ve chosen lots so far, but forgot Dagger synth!

I did actually try it, and it limited itself to a fairly short and unremarkable list😅
For pure sound quality, BeepStreet (Zeeon, Dagger) and Moog (M15, MM). But there are lots of other wonderful-sounding synths.
They're all pretty similar sonically. Doesn't make much of a difference. Just find one with features and an interface that you like and push it as far as you can. FX and sequencing and what really make a sound shine. The source doesn't matter much.
I disagree, but regardless the thread isn't about if one synth is better than another. It's about your current favourites.
What's YOUR favourite synth to program in?
It's a genuine question from me too. I get a lot out of these threads because i have a lot of synths and forget sometimes how much inspiration i get from trying something different. ☺️
IM1 is my latest favorite. The master tuning is like no other if you want to tune to a specific frequency besides 440, up to 2 decimal places 436.69=A. AND each instance can have its own tuning. Great for creating binaural beats. I don’t know of any other synth that can do this.

Synthmaster 2 seems to get more use than any of my other synth apps.
Sunrizer ALWAYS surprises me with how amazing it sounds, and it's one of the oldest
Factory is my go-to for "I need something amazing sounding that's different, and I'll know it when I hear it" as a trawl through its sounds.
Korg Mono/Poly to me sounds better than almost anything on iOS, but is never used because no AUV3. A cryin' shame.

Atoms is appearing in lots of my tracks, I just vibe with it. I can get it thin enough to sit well in a mix, it layers up really nicely and can do interesting plucky arps. I also love the way it can emulate a really just resined bowed instrument. That powerful attack that almost sticks but then flows afterwards.
yeah - Mono/Poly would be in my top 3 - Korg is sure taking their sweet time converting those other gadgets to auv3!
All of the Iceworks synths - these are by far my favorite to create patches with . These are works of genius
Mood- it sounds more like the Model D than the official app version
Zeeon/Dagger - both sound like hardware
BA-1 - Can make some really great lush sounds
BLEASS omega- the best non-Nambu FM synth and absolutely a blast to create patches with

I don’t know why…but I really love the synths in Groovebox…they sound realllllly good to me
Poison sounds like a Roland hardware synth…no going wrong there
My favorite Yonac synths are Magellan 2 and Kaspar…so haunting, great for carpenter style stuff
Model 15 for 70s Rock synths all day.
IVCS 3 gives me gas for Syntrax II….must not buy!!!!
Aparillo, Factory, and Tardigrain just lend themselves to dark horror stuff
Twin3 has so much beauty in the UI and great sounds to boot

Nambu is one of the best clear FM synths going…especially the stringed instrument stuff…so nice

I like Nave because it led me to Iridium….but now that there’s iridium…Nave isn’t used

Far as drum synths go my one and only love is definitely Drum Computer!!!
I like Atoms and Ringz for bowed and metallic textured stuff
NERD and Discovery are interchangeable to me for 90s dance material
OBX is nice for 80’s rock
FM Zone surprised me …this synth is fantastic to me!!!
DRC is nice but I hate the preset system…love the entire rest of it though

It’s my desert island synth. Sounds so good, is so resource friendly… The voice programmer mod thing is awesome. The mod matrix is robust.
These days I've gotten pretty deep into Ringsfx and Magellan 2. 😘
Both those synths have wildly good randomizers that consistently produce patches that are quite usable or tweakable.
