I just got an air 1 / 32gb . I perhaps should have gotten a 64gb however I have a whole bunch of apps loaded that I never really use and could reduce my app footprint considerably if I need the space. However I also believe there are going to be larger and more capable apps coming this year and next so time will tell. As far as projects I am not concerned now that Kingston and others are coming out with external storage options.
I think the big factor is how many audio files you intend to create. You can dump some to the cloud with a program like Dropbox but then that gets filled up. Also non music activities take up space. I used up my old 64GB iPad 3 so for my new iPad Air 2 I got 128GB.
