How about Midi?

No, you can only drag audio files into GB. I tried.

That's what I thought.... Hopefully in a future update...

Here's what I've learned about MIDI editing in GB so far:

On your timeline, tap the track twice, You'll get a number of options: cut, copy, delete, loop, split, edit, rename and settings (velocity, looping, quantization, speed, reverse)

Tap "edit" You'll see a midi grid. It's easy to drag notes around or make them longer or shorter. Spreading your thumb and forefinger you can make the grid bigger, both side to side and top to bottom. If you hold your finger down on the pen button on the top left, you can draw in new notes. They'll be the length of the last note you made. If you slide it into the lock area, you don't have to hold it down. There's an "undo" icon to the right of the pen.

If you tap twice on a note you have the option to cut, copy, delete, or change velocity. The velocity slider is very cool, you can hear the loudness change as you slide it.

For some instruments there are more options. With the strings for example, you can change the instruments (violin, 2nd violin, viola, cello, bass) and articulations (legato, staccato or pizzicato) and with the Guzheng you have a choice of 6 articulations (plucked, picked, Tremolo, Harmonic, Glissando Picked, and Glissando Fingers) There's so much you can easily do, beyond using their autoplay stuff. But the autoplay stuff is such a great start!

If you tap the screen twice where there's no note, you can "select all. If you hold your finger down, a box will appear to let you select more than one note. (Thank you @lovadamusic & @teleb for this)

The notes are clearly marked on the left and they sound if you touch them. If your instrument is a keyboard, you'll see a piano on the left, a stringed instrument it will be a fretboard.

When you're finished, click "Done" on the upper right.

As MIDI editors go, it's not at all bad.

The piano-roll in GarageBand is pretty good apart from missing any kind of controller editing.
Sustain Pedal can be drawn and 'articulation' from some instruments can be modified.

Considering all parameters of the touch-instruments can be automated and recorded it would be super sweet to be at least able to edit them.(Pitch-Bend and Mod-Wheel would be a good start).

The 'DJ FX' can also be recorded and automated but once again no detailed editing

Long hold your finger on a blank area of the grid. A box will pop up under your finger. Don't lift your finger, just drag in any direction to select contiguous notes.

Selecting multiple notes is possible. You can then move them, ore change their velocity, note length or articulation all at once. Copy and paste also works with multiple notes.
To select, tap and hold in a free area, where there is no note, then move your finger to select a rectangular area of notes.

The new MIDI AUs won’t work in any useful way. You can load and use them, but GB doesn’t let you send the MIDI to another instrument or channel. So they’re just silently playing in their own channel

I wish i could copy the midi clip from a smart bass to an AU track, garage band doesn't let me do that, any clue ?

Have you tried starting with a non au track and then changing the instrument to au?

I must be missing something, but when im in the smart bass, and I try to change the instrument to an AU, garage band load a new track instead of replacing it, I hope im doing something wrong

Unfortunately this is a no can do on iOS GarageBand...

The midi-track generated by 'Smart Instruments' can not be dragged to another type of track
Same goes for the 'Drummer Track' which would be handy to drag to a 'drum machine' track for detailed editing.

Guess they have to save some features for future updates

I think this may have something to do with the 'articulation'(PitchBends, Glides etc) that gets recorded using the smart-instruments and since GarageBand doesn't support editing of those they can not simply be 'dragged' to another track?(This is a long-shot). I mean you loose all automation recording when you change a patch in any of the instruments...

You cannot drag anything which contains special data like articulation.
This might not even be standard midi
